🍇 Dry Muscat — L’Tron Winery | Jerusalem Hills
About the Wine:
The wine is made from 100% Muscat grapes, grown in the Jerusalem Hills. The mountainous climate and temperature differences between day and night give the grapes natural aromatics, freshness, and precise acidity. Fermented exclusively in stainless steel tanks, with no contact with oak, preserving the clean, fresh, and natural fruit flavor. This is a completely dry, crisp, and refreshing wine.
Palate (Taste):
Completely dry, bright and pleasant acidity, very light. Flavors of white peaches, lychee, and fresh grapes.
Nose (Aroma):
White flowers, orange peel and citrus, with delicate sweetness.
Food Pairing:
Sushi, fresh fish, light salads, goat cheese, and seafood.
Serving Temperature:
8–10°C (46–50°F).
About the Winery:
L’Tron Winery, located at the Trappist Monastery in the Jerusalem Hills, is known for precise, clean, and fresh wines. They emphasize the quality of the highland soil and the grapes, producing elegant, balanced, and refreshing wines.
The wine is composed of 85% Cabernet Sauvignon and 15% Merlot. Sol is the younger, more approachable version from the winery. Grapes are hand-picked from Givat Nili — a region combining hills and coastal influences, with a Mediterranean climate. The wine is aged for nine months in French and American oak barrels, providing complexity, softness, and refinement without overshadowing the fruit. Elegant, medium–full bodied, deep, and balanced, with presence but not overwhelming. Perfect for everyday drinking or paired with food.
Palate (Taste):
Noticeable yet soft tannins, flavors of blackcurrant, ripe plum, and blueberries, with hints of vanilla and warm spices.
Nose (Aroma):
Blackberries, blackcurrant, black pepper, and delicate vanilla.
Food Pairing:
Meat, slow-cooked stews, casseroles, and hard, aged cheeses.
Serving Temperature:
16–18°C (61–64°F). Open 30 minutes before drinking.

Ayal Winery is a family-run boutique winery in Givat Nili, emphasizing a connection to the growing region and creating wines with a clear local character. From grandfather to grandson, the family is hands-on in both the vineyard and winery.

🍷 Givat Orcha 2019 — Maor Winery | Golan Heights
About the Wine:
Givat Orcha is a rich, full-bodied red blend, primarily Cabernet Sauvignon, with small amounts of Syrah and Petit Verdot. The grapes come from two vineyards in the Golan Heights — a volcanic, mountainous region with basalt soils that provide depth, concentration, and unique character. Grapes undergo spontaneous fermentation without added yeasts, resting on the skins for two to three weeks. The wine is aged in used French oak barrels, then another 18 months in bottle before release. Elegant, full-bodied, ready to drink, with a remarkable presence on both the palate and the nose.
Palate (Taste):
Dominant dark fruit — black cherries, plums, and blueberries — with touches of cocoa, gentle oak, and Mediterranean herbs. Balanced acidity with a long, mineral finish.
Nose (Aroma):
Dark cherries, blackberries, wet earth, tobacco leaves, chocolate, and delicate cocoa notes.
